The estate, that is now run by his 3 great grandsons, was originated by Albert Doulet, born 1895 in nearby Carcassonne. Their Cremant Rosé is a blend of 2 Champagne varities with Chenin Blanc making up the rest of the blend. As with many regions in France, here lies claim to the first ever sparkling wine (by the monks of the Saint-Hilaire abbey in 1531).
