Cartology 2021 is made from old, dry farmed bush vines. The grapes are whole bunch pressed and lightly settled after careful hand selection, with no additions to the natural juice. Wild yeast fermentation occurs in a variety of concrete eggs, clay pots, and old barrels of various sizes, and can last anywhere from 3 weeks to 11 months. The wine is then aged on its lees in tank for approximately 12 months, with an additional 6 months to settle before bottling.
