Vineyards with traditional pergolas with 800 vines/ha. Soils of granitic entisols of clayey character. Altitude of 80 m. Yield of 5,000 Kg/ha. Manual harvest in perforated boxes of 15 kg. Manual selection upon entry into the winery. Complete destemming and pneumatic press. Cold settled. Spontaneous alcoholic fermentation in French oak barrels (500L). Ageing in barrels for 12 months with fine lees and "batonnage". Clarification with fish glue. Tangential flow filtration.
