The grapes used are harvested from 3 vineyards which were kept separate during the winemaking fermentation process.
The Brawn & Kennedys Road parcels are vinified traditionally with 100% machine harvested, stainless steel fermentation with cool temperatures to retain pure, fruit-forward Sauvignon Blanc characteristics.
The Brink parcel, which makes up 20% of the blend, was handpicked and split into a further two parcels, and was a co-fermentation with Semillon and Sauvignon Blanc with 10% spending fermentation in old French barriques. This enhanced the mouthfeel and drew in the Semillon to provide interest and intrigue to the resulting final blend.
Once fermentation finished we left the wine on light lees to gain some mouthfeel while holding onto the brights of this variety.
