Grapes are hand picked into wooden cases from vineyards on the hillsides around Verona, at altitudes of 150 - 400 meters. The vineyards have rocky soils of silt on loam rocks.
Grapes are now dried in special drying chambers, where over 120 days the grapes will lose 35 - 45% of their original weight. The drying process concentrates the flavours of the grapes, and also induces chemical reactions involving acids and tannins which enhance the balance of the finished wine.
After crushing, the grapes undergo a cool, dry fermentation process for 30 - 50 days. The wine is aged initially in stainless steel, then 40 - 60% will undergo aging in Slavonian Oak Tonneaux for 12 months.
The Biscardo family have been producing wine in Soave for over 150 years. The business is currently run by brothers Maurizio and Martino Biscardo
