A silky wine with red and black fruit aromas, notes of pure violets, and hints of spice. It's juicy, fresh, and compact on the palate. A medium-bodied, ultra-refined wine with fine tannins and well-balanced acidity. It has a long and lingering finish.
El Velado is sourced from the winery's highest elevation vineyards. A plot of less than one hectare that is 600 metres above sea level and is planted with vines that are on average 80 years old. The vines are grown organically, with no chemical products used. The harvest is done by hand at the optimal point of ripeness.
The grapes for El Velado are destemmed and gently crushed before fermentation in open 3,000-litre oak vats with native yeasts. The wine is then aged for about 15 months in oak barrels and foudres before being bottled.
