200 grams of residual sugar.

Aged for three years outdoors in 60 litre glass demi-johns. The changing temperatures - sweltering heat of summer, snow in winter and the varying light give the wine the special oxidative and secondary aromas. The demijohns are never completely emptied, creating a medley of many vintages when new wines are added, similar to a solera system in sherry.

The wine is then aged old large wooden casks for 3 years.

Total aging of 7 years.
