Over 90% of the grapes are grown on the estate's 80 hectares of vineyards, which range across the Côte Chalonnaise, Côte de Beaune and Côte de Nuits. After 10 days of cold pre-fermentation maceration, the grapes are fermented in temperature controlled stainless steel vats, with regular pumping over and punching down.
The wine is matured for 10 months, 50% in neutral 228L oak barrels and the remainder in stainless steel. The blended wine is then aged for a further 1 month in stainless steel before bottling.
Since 2018, Chanzy has been owned by Philippe Der Megreditchian. He appointed Max Blondelle as chief wine maker and together they have embarked on a project to totally overhaul the operation. They have consolidated the range of wines and acquired additional vineyards in the Côte Chalonnaise and Côte de Beaune. Their range now includes 11 Grand Cru and 16 Premier Cru wines. The operation is in the process of transition to organic, which will be achieved in 2024. They already are one of the few producers to achieve Haute Valeur Environnementale level 3, covering biodiversity, plant protection, water management and fertiliser use.
