Fruit is picked from selected vineyards in the Riverina region. The fruit is left to ripen on the vine until the March rain showers induce the growth of Botrytis. The progress of the "Noble Rot" is carefully monitored, with grapes picked as the required sugar content is achieved.
8% of the wine is matured in 2 year old French oak barriques.
This wine is ready to drink, but also has good cellaring potential.
Vittorio and Giuseppina De Bortoli moved from war torn Italy to Australia in the mid 1920's. In 1928 they purchased a small fruit farm in New South Wales. That same year there was overproduction of Shiraz grapes, so the farmers were leaving them to rot in the field. Vittorio collected 15 tonnes of unwanted grapes and produced the first De Bortoli wine which was sold to local European immigrants. The business has subsequently expanded under the management of successive generations of the family, winning multiple awards for their dessert wines and cool climate wines produced at their Yarra Valley Estate.
