Harvested at good ripeness in order to get the right balance between sugar and acidity. After racking, Chenin and Chardonnay are made separately. Slow fermentation at low temperature (16°C to 17°C). Then Chenin and Chardonnay are blended, prior to traditional method secondary fermentation in bottle.
