The non-irrigated and well acclimated vines of Liatiko in the regions of Sitia and Rethymno, provide low yields and high quality grapes. Hand-harvested during the first week of September. Fermentation was achieved in a stainless steel tank at 23°C after a 5-day maceration for colour extraction.
