Grapes are grown in the Avia, Arnoia and Miño valleys and harvested by hand. The grapes are chilled prior to fermentation with natural yeasts, with grapes from different parcels fermented separately using a variety of vessels: oak barrels; egg shaped concrete tanks; stainless steel tanks. The wine is aged on the fine lees in stainless steel tanks before bottling.
Dominio do Bibei was established in 2000 by Javier Dominguez who wanted to produce wines that demonstrated the characteristics of the old vines and harsh landscape of Ribeira Sacra. He is now acknowledged as one of the dominant players in the drive to enhance the quality of Ribeira Sacra wines. They have a 140 hectare estate, with 45 hectares of vineyards. The winery is built on a steep hillside and designed to allow gravity to move the wine through the production process.
