Winemaker Caroline Morin has made her wine to demonstrate finesse and minerality, with more sophistication than a typical picpoul.
Grapes are harvested at night and pressed immediately in order to maintain freshness. After cool fermentation the wine is aged on the lees, with regular stirring, to develop a rich round feel in the mouth.
This wine is the perfect partner for fish and seafood dishes.
Wines have been made at Domaine Morin since 1330, when it belonged to the Order of the Knights of the Holy Spirit. The Morin family became owners of the estate in 1966 and now Caroline Morin has succeeded her father Albert as winemaker.
