Produced with fruit from Grifoll Declara's Centenaries vineyard in Priorat, Catalonia. The vineyard is steeply sloping at an altitude of 360m - 450m, with slate / stone soils. Vineyard management is carried out with respect for the environment, without any use of pesticides or herbicides.
Grapes are harvested by hand, packed in small sterilised crates and arrive in the winery within 3 hours of having been removed from the vine. Grapes undergo 15 days of maceration then fermentation takes place in 225 Litre oak barrels, using natural yeasts. The wine is aged for 15 months in French oak barrels before bottling.
The Grifoll family have been producing wine since 1736. In 1880 they moved to commercial wine production with the establishment of the Grifoll Declara cellars. The business is still family owned today, with the 5th generation of the family now running the operation.
In 2016 Wine Enthusiast Magazine identified Cellers Grifoll Declara one of the 28 best wineries in Spain
