When we first tried this wine we were excited to experience something relatively new, almost modern. Especially as it was coming from an area of production where not much has changed for centuries.
The Hidalgo family teamed up with famous Rioja winemaker Basillo Izquierdo to make this creation. The Palomino grapes, which are the key ingredient in the dry sherries that we love, are pressed lightly and vinified before being aged in ex-manzanilla casks.
Buttery and creamy Palomino with zippy lemon like acidity all balanced by a nutty and salty finish. In our opinion you will start to see more of this style coming from the province of Jerez. It is the perfect marriage between sherry and an aged Chablis.
