The fermentation takes place in small temperature controlled stainless steel vats and the wine is matured on the lees until bottling in spring.
Grapes are grown in a 15 hectare hillside vineyard, orientated to the south, in Sainte-Gemme-en -Sancerrois. The soil in the vineyard is flinty: Chateau Fontaine Audon is the only Sancerre chateau to produce its grapes entirely on flint soils. The yield of the vines is meticulously controlled to ensure the quality of the fruit. Grapes are harvested in the cool of the early morning to maintain freshness then crushed with a pneumatic press. The juice is fermented in small, temperature controlled stainless steel vats and the wine matured on the fine lees in stainless steel tanks.
The property has been producing wines since 1885, initially as Maison Delandes. In 1912 Edouard Langlois and his wife Jeanne Chateau acquired the property and established Langlois-Chateau. Since 1973 the business has been owned by the Bollinger group.
