An Alicante specialty made with overripe Monastrell grapes, aged extensively in solera. Off-dry with aromas of dried fruits and toasted almonds. The palate feels savoury, composed of hazelnut, dried fig and woody notes.

Fondillones are capable of extended ageing in solera, protected by a naturally higher level of alcohol, achieved through the over ripening grapes on the vine. These wines are never fortified.
The 25 year old is a blend of 2 different, single barrel soleras aged in 19th century American oak. A ‘saca’ was taken from each of the casks and blended. The original casks were topped up individually, with another wine at least 10 years old and will be left for a minimum of 10 years before any more wine is extracted.
