After the harvest, the grapes are spread out on reed trays where they are left to raisin until the New Year in the open air, only under the protection of a cover and a net to keep out insects and birds. The raisined grapes are gently and slowly pressed (up to 48 hours). The nectar goes directly into aged French oak barrels. Spontaneous alcoholic fermentation lasts for more than 10 months.More than 36 months in aged 225-liter French oak barrels. Each bottle contains the blend of wines from three to four vintages.
