Only produced in selected years when the fruit quality is excellent. Grapes are sourced from a single vineyard: the highest in Maury, located on a very steep, north facing slope. The vines here are over 120 years old. The elevation and orientation means that the grapes ripen more slowly and in good years develop more complex flavours. Grapes are carefully harvested by hand, which not only preserves the quality of the fruit, but is a practical necessity as the vineyard terrain is beyond the capabilities of mechanised harvesting equipment!
The wine is aged for 18 months in previously used 400L barrels before bottling.
We advise that this wine is decanted before serving.
Owner Moritz Bak's interest in wine started at an early age as he spent long summers with his wine loving Grandfather in the south of France. He spent time travelling and working in the vineyards and wineries of some of the worlds best wine producers before returning to Rousillon and selecting vineyard sites which would produce grapes with which he could realise his vision: From the toughest terrain - the finest wine. His first vintage was produced in 2014. Acclaim and awards soon followed.
