From 50 year old, bush vine (goblet) vineyards located in San Lorenzo del Bierzo, on the slopes of Montes-Aquilianos. The Mencía is harvested in small boxes and destemmed. Spontaneous fermentation is allowed to take place without temperature control to create body. Afterwards, the wine is matured for three months on its fine lees in stainless steel.
