Made with a rare grape variety Vostilidi which is native to the Ionian Islands, this wine is smokey, spicy and saline with fresh citrus notes and some floral character.
Vostilidi is a rare grape variety grown across the Ionian islands, previously thought to be the same as Ribolla Gialla from Friuli. Grapes for this wine are sourced from a tiny vineyard, located in Lixouri, on the east coast of Kefalonia, next to Vatsa Beach.
The grapes are hand-harvested and gently pressed in a pneumatic press and settled before fermentation takes place in stainless steel tanks with wild yeasts. The wine is then matured in Foudres for 9 months before bottling without fining or filtration.
